Fishy Friday - Cajun Spiced Salmon

Seeing that today is Good Friday and that Friday is a traditional day to have fish, I said it was only fitting of me to post a recipe on it. 


Now student DON'T run away because you see FISH!!! Believe me once you go Cajun style you'll NEVER go back.  Packed with omega 3 (good for skin, eyes and overall brain function), protein and loads of other nutritional benefits its a meal you can pat yourself on the back for having once a week!! 


You can either buy it frozen or fresh depending on your money status but either way it works really reasonable in comparison of paying a whopping €14 for it dinning out! Not only that it takes less than 10 mins to complete :0 Lastly, if you are feeling like a bit more than a side salad team it with some couscous and steamed vegetables. :) 



Ingredients:


1 Salmon cutlet


Mixed peppers thinly sliced


Handful of Iceberg lettuce


1 Tomato chopped


2 tbps of Cajun Spices


COOKING

  1. Sprinkle the Cajun spices over your Salmon 
  2. Grill it under a medium heat for 5-10 mins
  3. Prepare your salad
  4. Serve up your salmon on a plate with your side salad
Snubbing it UP!

If you are cooking for the parents, holding a dinner party or so forth you can posh it up with some steamed potatoes and vegetables. Then pair this fabulousness with a zippy red wine such as a California Zinfadel.

Eggy Bread

This is ESPECIALLY for my best friend Joe who hasn't been having BREAKFAST!!!! Now this Eggy bread is for all YOU Joe's this is going to be the start of your breakfasts's^^
 It serves four hungry mouths but if one if you refusing to share;)
Plus its easy peasy and at less than a EURO how could you go wrong!  
 This is even great as a quick snack with Tomatoe sauce.  However, if you want to work it American style, stack it with crispy bacon with lushings of maple syrup!

Ingredients:


3 eggs, beaten
1 tbsp milk
4 thick slices of white/ brown bread
2 tbsps sunflower oil for frying for frying





COOKING!
  1. Put 1 tbsp of oil in a frying pan over a medium heat
  2. Whisk the milk, eggs and salt in a bowl with a whisk/fork
  3. Dip the bread in the egg, soaking as much of the egg the bread can take!
  4. Soak the opposite side
  5. Cook the bread in a frying pan for 1-2 minutes, flip over and cook the other side.
Your bread should appear golden and cooked through.

Now eat it up STRAIGHT away before anyone else takes it ^^

Fresh Tomato Pasta

           Are you a bit of a pasta addict like me? I'm just mad for pasta like if there was no pasta in the world tomorrow..don't know how I carry on!! That would be scary! For now though we shall embrace all that we love about pasta with my dish for ye ^^

           Its a simple dish that has everything- attractiveness, flavor with a cheap as chops price of €1.50! Plus if you are cooking for yourself or have some leftover, you can refrigerate it.  This will make a great lunch with some rusty rolls.  Ahhh love pasta:)    


Ingredients

·       

  •      Tin of tomatoes/ 250g Cherry Tomatoes
  • ·       Oregano
  • ·       Salt/pepper
  • ·       Olive Oil (1 tbs)
  • ·       Mushrooms (optional)
  • ·       Crushed Garlic
  •      3 oz Tomatoe & Cheese filled pasta/ any pasta you fancy

    COOKING


  1. Pour chopped tomatoes or place cherry tomatoes in a roasting tin.
  2. Drizzle in the olive oil and season with salt, pepper & oregano
  3. Add in the crushed garlic & chopped mushrooms
  4. Oven roast for 10 mins at 180
  5. Now simmer the pasta in lightly salted boiling water for 2-3mins
  6. Drain Pasta in a colander
  7. Take sauce out of the oven
  8. In a bowl combine the sauce and pasta.

NOW!


If you want to ad a little something something ...you can top top it off with some 
Parmesan shavings & serve it with a Greek salad.


So kick off the shoes, put on some tuneage and enjoy the YUMMINESS :)
