Salmon Herb Parcels
This dinner is sure to impress all, even the most salmon conscience of people amongst us! All the flavors and goodness are sealed in the parcels and when accompanied with parsley sauce its a sure winner. This dish makes an ideal dinner for those in a rush (taking less than 20 mins) or fish course for a formal dinner party. And to top it off it comes in at a mere €5, keeping all our student pockets happy :D
Ingredients:
4 Salmon Steaks (Depends on how many you are or not cooking for!)
2oz Butter
2 Bay Leaves
4 Parsley sprigs
4 Onion slices
4 Thyme sprigs
Salt & Ground Black Pepper
Parsley Sauce
1 oz butter
1oz sieved plain flour
150 ml hot water
150 ml hot milk
Salt&Ground black Pepper
Parceling it up!
- Place each Salmon on a square piece of tin foil.
- Place a knob of the butter on the salmon.
- Top with all the herbs and onion slices.
- Wrap the steaks and place in the oven at 180 for 15-20 minutes.
- Melt the butter.
- Stir in the flour for 1-2 minutes.
- Take off the heat and GRADUALLY add in the hot water & milk
- Stir vigorously to make sure its smooth.
- Put back on a medium heat.
- Add in the parsley, season and stir until thick.
Dish it up accompanied
by some garden peas and potato croquettes.
