Salmon Herb Parcels

Salmon Herb Parcels

           This dinner is sure to impress all, even the most salmon conscience of people amongst us! All the flavors and goodness are sealed in the parcels and when accompanied with parsley sauce its a sure winner. This dish makes an ideal dinner for those in a rush (taking less than 20 mins) or fish course for a formal dinner party. And to top it off it comes in at a mere €5, keeping all our student pockets happy :D


Ingredients:
4 Salmon Steaks (Depends on how many you are or not cooking for!)
2oz Butter
2 Bay Leaves
4 Parsley sprigs
4 Onion slices
4 Thyme sprigs
Salt & Ground Black Pepper

Parsley Sauce
1  oz butter
1oz sieved plain flour
150 ml hot water
150 ml hot milk
Salt&Ground black Pepper



Parceling it up!

  1. Place each Salmon on a square piece of tin foil.
  2. Place a knob of the butter on the salmon.
  3. Top with all the herbs and onion slices.
  4. Wrap the steaks and place in the oven at 180 for 15-20 minutes.
Parsley Sauce

  1. Melt the butter.
  2. Stir in the flour for 1-2 minutes.
  3. Take off the heat and GRADUALLY add in the hot water & milk
  4. Stir vigorously to make sure its smooth.
  5. Put back on a medium heat.
  6. Add in the parsley, season and stir until thick.
Dish it up accompanied
 by some garden peas and potato croquettes. 
Being healthy was never so EASY!

Nuts about Crumble

    Okay so you've opened all the presses in the house and theres NOTHING to eat! And hey you don't want to go to the shop..So what to do??? Get what you got and make this delicious nut crumble!
      It feeds four hungry stomachs or yourself if your on the brink of serious starvation!  Best thing about this is that you can adapt it to fit WHATEVER you got in the house.  I'm always doing it and I love that this dish is so adaptable that its perfect for all of us who got vegetarian friends/roommates. 



Ingredients:

Crumble:

  • 4oz plain flour
  • 2oz butter
  • 1 oz porridge oats
  • 2oz mixed nuts

Filling:

  • 1 carrot
  • 1 parsnip
  • 8oz broccoli 
  • 8oz swede
  • 8oz celeric
  • 1 onion
  • 1 1/2 oz butter
  • 1 1/2 oz plain flour
  • sea salt & black pepper


Nutting the Crumble

  1. Turn your oven onto 190 c
  2. Peel and chop your vegetables (or do whatever with what you got!)
  3. Fill a large saucepan with 500ml of water with a teaspoon of salt
  4. Bring it to the boil add all the vegetables except the broccoli.
  5. Leave to cook for 5 minutes
  6. Add the broccoli and cook for another 5 minutes
  7. Take 150ml/1/4 pint of the water from the saucepan
  8. Drain the rest of the water
  9. Peel, slice & dice the onion
  10. Melt the butter in the pan & cook the onion for 2-3 minutes
CRUMBLE
  1. Sieve flour in a large mixing bowl
  2. Rub the butter in with your finger tips
  3. Stir in the oats and nuts

SAUCE!
    1. Stir in the flour and cook for a minute
    2. Take off the heat and add a little milk
    3. Stir well and continue adding a little milk at a time
    4. Now stir in the cooking water
    5. Put the sauce back on the pan and cook for a minute


The Finishing Touches
  1. Spoon the vegetables into the dish & pour the sauce over it
  2. Season with salt & pepper
  3. Evenly pour the crumble over the vegetables
  4. Bake for 35 minutes until golden brown


Now spoon it on to the plates
and EAT it before everyone else does:p

Scrumpidillyicious Biscuit Cake

   So todays my Birthday and hey feeling a bit selfish with this post because...this is MY post really...-
 Joke Joke :p 
  Nothing in the World compares to it..even Prince Willian agrees munching it down there at his weeding last week! You don't need much funds or even heat to create this YUMNESS! 
So come on have some biscuit cake with me  :D


Ingredients:

-6oz sugar
-2 eggs
-2 tablespoons cocoa powder
-few drops of vanilla essence
-2-3 packets of plain biscuits
-6oz of butter (or dairy-free alternatives)
-chocolate for cake covering (optional but you know you want too!)

Biscuit Time


>Melt butter and sugar in saucepan

>Beat eggs and add vanilla essence and cocoa powder

>Break (not crush) up biscuits

>Add egg mixture to butter and sugar mixture (in a bowl) and mix together, add in biscuits and mix until biscuits are well covered

>Press firmly into a buttered/oiled tin (use knuckles and a wooden spoon to press in)

>Leave in fridge overnight or until set

>Remove from fridge and melt chocolate for covering the cake and cover then cover the cake

And VoilĂ  Biscuit Cake

Fishy Friday - Cajun Spiced Salmon

Seeing that today is Good Friday and that Friday is a traditional day to have fish, I said it was only fitting of me to post a recipe on it. 


Now student DON'T run away because you see FISH!!! Believe me once you go Cajun style you'll NEVER go back.  Packed with omega 3 (good for skin, eyes and overall brain function), protein and loads of other nutritional benefits its a meal you can pat yourself on the back for having once a week!! 


You can either buy it frozen or fresh depending on your money status but either way it works really reasonable in comparison of paying a whopping €14 for it dinning out! Not only that it takes less than 10 mins to complete :0 Lastly, if you are feeling like a bit more than a side salad team it with some couscous and steamed vegetables. :) 



Ingredients:


1 Salmon cutlet


Mixed peppers thinly sliced


Handful of Iceberg lettuce


1 Tomato chopped


2 tbps of Cajun Spices


COOKING

  1. Sprinkle the Cajun spices over your Salmon 
  2. Grill it under a medium heat for 5-10 mins
  3. Prepare your salad
  4. Serve up your salmon on a plate with your side salad
Snubbing it UP!

If you are cooking for the parents, holding a dinner party or so forth you can posh it up with some steamed potatoes and vegetables. Then pair this fabulousness with a zippy red wine such as a California Zinfadel.

Eggy Bread

This is ESPECIALLY for my best friend Joe who hasn't been having BREAKFAST!!!! Now this Eggy bread is for all YOU Joe's this is going to be the start of your breakfasts's^^
 It serves four hungry mouths but if one if you refusing to share;)
Plus its easy peasy and at less than a EURO how could you go wrong!  
 This is even great as a quick snack with Tomatoe sauce.  However, if you want to work it American style, stack it with crispy bacon with lushings of maple syrup!

Ingredients:


3 eggs, beaten
1 tbsp milk
4 thick slices of white/ brown bread
2 tbsps sunflower oil for frying for frying





COOKING!
  1. Put 1 tbsp of oil in a frying pan over a medium heat
  2. Whisk the milk, eggs and salt in a bowl with a whisk/fork
  3. Dip the bread in the egg, soaking as much of the egg the bread can take!
  4. Soak the opposite side
  5. Cook the bread in a frying pan for 1-2 minutes, flip over and cook the other side.
Your bread should appear golden and cooked through.

Now eat it up STRAIGHT away before anyone else takes it ^^

Fresh Tomato Pasta

           Are you a bit of a pasta addict like me? I'm just mad for pasta like if there was no pasta in the world tomorrow..don't know how I carry on!! That would be scary! For now though we shall embrace all that we love about pasta with my dish for ye ^^

           Its a simple dish that has everything- attractiveness, flavor with a cheap as chops price of €1.50! Plus if you are cooking for yourself or have some leftover, you can refrigerate it.  This will make a great lunch with some rusty rolls.  Ahhh love pasta:)    


Ingredients

·       

  •      Tin of tomatoes/ 250g Cherry Tomatoes
  • ·       Oregano
  • ·       Salt/pepper
  • ·       Olive Oil (1 tbs)
  • ·       Mushrooms (optional)
  • ·       Crushed Garlic
  •      3 oz Tomatoe & Cheese filled pasta/ any pasta you fancy

    COOKING


  1. Pour chopped tomatoes or place cherry tomatoes in a roasting tin.
  2. Drizzle in the olive oil and season with salt, pepper & oregano
  3. Add in the crushed garlic & chopped mushrooms
  4. Oven roast for 10 mins at 180
  5. Now simmer the pasta in lightly salted boiling water for 2-3mins
  6. Drain Pasta in a colander
  7. Take sauce out of the oven
  8. In a bowl combine the sauce and pasta.

NOW!


If you want to ad a little something something ...you can top top it off with some 
Parmesan shavings & serve it with a Greek salad.


So kick off the shoes, put on some tuneage and enjoy the YUMMINESS :)

How to make MMMMMMMMm Scones

                                                       So its lent-WHAT TO EAT???
                                     Here something to keep the cravings at bay ;)


INGREDIENTS:
8 oz/225 g Self Raising Flour
1 Teaspoon of baking powder
Pinch Salt
50g/2oz Butter
25g/1 oz Stork/Pure Margarine
105ml/1/4 pint of milk
Equipment
Scone Cutter
Baking tray
Pastry brush
Wooden Spoon
Mixing Bowl
COOKING SCONESS!!
  1. Oven at 230c/gas mark 8. Grease your baking tray.
  2. Sieve flour,salt and baking powder into the bowl.
  3. Cut the margarine into small pieces and add them to the bowl.
  4. Rub the mixture together using your finger tips until it looks like bread crumbs.
  5. Add the sugar and milk(plus the optionals)
  6. Mixing everything with the knife until its a soft dough.
  7. Knead the dough and roll it out on a floured surface.
  8. Cut the scones out with the cutter
  9. Place on a baking tray and brush over with a little milk.
  10. Bake for 7-10 mins on the top shelf...and let them cool on a wire tray when done!

ADAPTATIONS: If you are allergic to WHEAT opt to use doves Spelt flour together with buttermilk and wheat free baking powder.  If you are aCOELIAC use Odlums Tryitaml flour, two tablespoons of gluten free baking powder and 1 tablespoon of xanthan gum.

How to make Stuffed Peppers

Enough for 4!
EQUIPMENT
  • baking tray
  • pastry brush
  • sharp knife
  • measuring jug
  • medium size pot
  • sieve
  • wooden spoon
  • small spoon
  • tin foil
INGREDIENTS
  • 4 medium peppers
  • 4 tablespoons of olive oil
  • 1 vegetable stock cube/1 teaspoon of bouillon powder
  • 6oz/175g long grain rice
  • 1 clove of garlic
  • 1 small red onion
  • 20z/50g of petite pois   
  • 1 tin of chopped tomatoes
  • teaspoon of mixed herbs
  • sea salt and black pepper
 COOK AWAY!


  1. Switch the oven on to 200c/gas mark 6. 
  2. Wash and Dry the peppers and put them on the baking tray
  3. Brush peppers with 2 tablespoons of olive oil.
  4. Place them in the oven for 10 mins
  5. Once cooked, let them cool..and then cut them down the middle
  6. Take off the core and stalk. Place them back into the tray
  7. Dissolve the stock cube into a jug. Add 600ml/1 pint of boiling water to the jug.
  8. Stir well and pour stock into a pot.Again add 600ml of boiling water.
  9. Cook the rice for 10 mins and turn the heat down so that it bubbles.
  10. Slice the onion and crush the garlic. Boil the peas
  11. Heat two tablespoons of oil and cook them until tender.
  12. Stir in the tomatoes, salt and pepper. Let it cook for 5 minutes.
  13. Mix the rice and peas together with the tomato sauce.
  14. Spoon the mixture into each pepper
  15. Spread little oil on the inside of the tin foil.
  16. Cover the peppers in it and cook for 10 mins.
VoilĂ !!!

 Yummy, Nutritious meal all for less than €5.

CookQuirky: How to make Peter Perfect Pancakes

Well LOOK below where YOU'll have the BEST pancakes ever!!!!!
 If not I'll make you some (joke btw ;))

How to make Peter Perfect Pancakes

 PANCAKES 
with Chocolate Sauce!
Ingredients:
  • 100g/3oz plain flour 
  • 1 egg
  • 250ml of milk
  • pinch salt
  • drizzle of oil
Chocolate  Sauce
55g/2oz Caster Sugar
 25g1/2 oz of dark cocoa powder
Splosh  warm water 

Equipment:
  • Frying pan
  • Mixing bowl
  • Wooden spoon/Whisk
  • Sieve
COOKING
  1. Sieve the flour and salt into the mixing bowl.
  2. Make a whole in the middle and drop in the egg and the milk(gradually!)
  3. Stir/Whisk the mixture.
  4. Heat frying pan with the oil.
  5. Pour in little of the mixture at a time and tilt the pan to spread batter over the pan.
  6. Fry on each side for 1-2 mins until golden.
SAUCE: Whisk the ingredients over a medium heat in a saucepan. Add extra water depending on how thick/thin you want it :)
NOW!
Place your pancakes on a plater and drizzle
the chocolate sauce ALL over!!!!
